Babycakes is a vegan bakery founded by Erin McKenna that offers all natural, organic and delicious alternatives free from the common allergens: wheat, gluten, dairy, casein and eggs. Most products are sweet- ened with agave nectar-a natural syrup from a cactus which is low on the glycemia index and often a safe alternative to most non-insulin dependant diabetics.
Erin grew up in the San Diego, CA and graduated from St. Mary’s College in Moraga, California with a Degree in Communications. While working in NYC, as a Fashion Assistant, she learned she had food allergies. She began eliminating a number of things (sugar, wheat, caffeine, etc.) from her diet, but was challenged to find alternative food substitutions. She began researching cookbooks for recipes. Having no success, she began to invent her own allergen free desert recipes. Her bakery, babycakes, now produces 20 products that are made from Erin’s original recipes (cookies, muffins, scones and cupcakes). Critics agree that her desserts are delicious.
Erin says the biggest challenge in starting the business was the financing, but she was able to raise the money needed from family and friends. The most rewarding aspect is working with “cool” people and seeing the enjoyment her customers get from her products.
Erin loves what she’s doing and does not mind the hard work. She now has 12 employees and works 6 days a week. Her goal is to franchise the babycakes business. Check out the babycakes website and you can order some healthy and tasty treats.
